Water kefir is an ancient fermented drink, naturally sparkling and rich in living micro-organisms. Unlike milk kefir, it is made from sugared water and fruit, making it a plant-based, lactose-free alternative suitable for everyone. At The Green Souk, we believe in the virtues of fermented foods for digestive health and general well-being. Water kefir is a remarkable example, alongside our artisan kombucha and our lacto-fermented vegetables.

What Is Water Kefir?

Water kefir, also called "fruit kefir" or "tibicos", is obtained by fermenting a sugared water solution in the presence of kefir grains. These grains are a symbiotic community of bacteria and yeasts that transform sugar into organic acids, carbon dioxide, and a multitude of bioactive compounds.

Water kefir grains differ from milk kefir grains in their polysaccharide matrix: an α1,6-glucan homopolysaccharide synthesised by Lactobacillus hilgardii. They contain a wide diversity of micro-organisms: lactic acid bacteria (Lactobacillus, Leuconostoc, Streptococcus) and yeasts (Saccharomyces, Candida), coexisting in symbiosis .

The result is a slightly tangy, naturally sparkling drink, low in sugars (as the sugar is consumed during fermentation) and rich in living probiotics.

The Role of Probiotics in Our Body

Before detailing the specific benefits of water kefir, it is useful to recall what probiotics are and why they matter.

Probiotics are defined as "live micro-organisms that, when administered in adequate amounts, confer a health benefit on the host" . Our gut harbours tens of billions of bacteria, forming a complex ecosystem called the gut microbiota. This microbiota performs essential functions:

  • Metabolic functions: fermentation of fibres, production of short-chain fatty acids, synthesis of certain vitamins.

  • Barrier function: protection against pathogens and undesirable substances.

  • Trophic functions: development and regulation of the immune system.

At The Green Souk, we have already explored this topic in our article on fibres and probiotics, where we explain how these two allies work together for a healthy gut.

When this balance is disrupted — known as dysbiosis — the consequences can be multiple: digestive disorders, inflammation, reduced immunity, and even metabolic conditions such as type 2 diabetes.

Probiotics, by favourably modulating this microbiota, can therefore help prevent or alleviate some of these imbalances.

The Benefits of Water Kefir

Scientific research on water kefir, although mostly preclinical, is promising. A recent scientific review highlights that water kefir and its components present antioxidant, anti-inflammatory, antibacterial, detoxifying, and gut microbiota-modulating activities .

Specifically, studies show that consuming water kefir can:

  • Increase bacterial diversity in the gut microbiota.

  • Enrich beneficial genera such as Lactobacillus and Bifidobacterium.

  • Reduce potentially pathogenic taxa such as Escherichia and Shigella.

A recent clinical study conducted on 40 healthy adults evaluated the effect of daily water kefir consumption (200 ml per day) on microbiota composition. Participants maintained their usual diet while avoiding commercial probiotics and fermented foods before and during the intervention. The results of this study, still under thorough analysis, aim to confirm whether the effects observed in animals are found in humans.

Other preclinical work suggests beneficial effects in models of type 2 diabetes, colitis, and liver damage . One study isolated a Lactobacillus paracasei strain from water kefir grains, showing it improved glucose tolerance and regulated the expression of genes linked to lipid metabolism in diabetic mice.

Finally, water kefir produces short-chain fatty acids (acetate, butyrate, propionate) during fermentation. These compounds are recognised for their role in immune balance and gut health .

Why Choose Water Kefir Over Other Probiotic Drinks?

Several assets distinguish water kefir:

It is lactose-free and plant-based. Unlike milk kefir, it contains no dairy products. It is therefore suitable for people with lactose intolerance, vegans, and anyone who prefers a non-dairy alternative .

It is rich in microbial diversity. Where many probiotic supplements contain only one or two specific strains, water kefir offers a natural diversity of bacteria and yeasts, born from the grain's symbiosis. This variety is considered an advantage for a balanced microbiota.

It is naturally sparkling and low in sugar. The sugar added during fermentation is consumed by the grains, resulting in a drink low in sugars, without sweeteners or artificial flavours.

It is delicious and refreshing. Its slightly tangy flavour, fruity notes, and light effervescence make it a healthy alternative to sodas.

How to Integrate Water Kefir into Your Routine

Water kefir can be consumed daily. A usual portion ranges from 180 ml to 500 ml per day . Start with a small glass and increase gradually, allowing your microbiota to adapt.

As with any fermented food, it is best introduced gently. Some sensitive individuals may experience temporary bloating in the first days of consumption, as the gut flora adjusts. If this occurs, reduce the amount and increase very gradually.

Water kefir should be kept in the refrigerator and consumed within days of preparation or opening. It continues to ferment slowly in the cold, which may slightly increase its acidity over time.
