Jams Rich in Fruit and Rich in Flavour

The jams we make at The Green Souk are not like the ones you usually find in shops. They are rich in organic fruit and low in organic cane sugar. This is not a marketing detail: it is a production choice that changes everything. Less sugar, more fruit, and in the end, an intense flavour that you only find in jams made with patience and high standards.

Sugar: The Ingredient That Makes the Difference

Traditional jam, the kind our grandmothers made, relied on a simple balance: 50% fruit, 50% sugar. This ratio ensured good preservation, with sugar acting as a natural preservative. But it also produced very sweet jams, where the flavour of the fruit was sometimes masked.

At The Green Souk, we have chosen a different balance. Our jams contain more fruit, less sugar. The sugar we use is organic whole cane sugar, unrefined. This sugar retains some of the minerals and vitamins of the sugar cane — calcium, iron, magnesium, potassium, vitamins B1, B2, B3, and B6. Unlike refined white sugar, which provides only empty calories, organic whole cane sugar brings additional nutritional value.

Rich in Fruit, Rich in Flavour

The first thing you notice when opening a jar of The Green Souk jam is the intensity of the fruit's flavour. This is the direct result of our choice to prioritise the quantity of fruit over that of sugar.

Our recipes are made from organic fruit, picked at maturity and slowly cooked. This slow cooking preserves the fruit's texture and concentrates its aromas, without needing to compensate with extra sugar. The result: a soft, fragrant, authentic jam that lets the fruit express itself fully.

Our Flavours: A Palette of Seasonal Fruit

Every The Green Souk jam is made from a fruit or a blend of carefully selected fruits. Here are the flavours you can find in our range:

  • Cherries: a indulgent jam with slightly tangy notes, capturing the flavour of fully ripe cherries.

  • Strawberries: an essential classic, sweet and fragrant, reminiscent of garden strawberries.

  • Mandarins: a soft and bright citrus jam, with delicate aromas.

  • Oranges: a jam with bold, slightly bitter notes, perfect for citrus lovers.

  • Figs: a smooth jam with honeyed and slightly caramelised notes.

  • Apricots: a summery jam, both sweet and slightly tangy, capturing the soft flesh of the apricot.

  • Peaches: a sweet and fragrant jam, with floral notes, ideal for breakfast.

Less Sugar: What It Changes

Reducing sugar in a jam means reducing added sugars. This matters for several reasons.

A more fruity flavour. Less sugar means more room for the fruit. The jam is no longer a sweet candy, but a true fruit concentrate.

Better control over sugar intake. For those monitoring their added sugar intake — whether for health reasons, weight management, or simply by choice — a less sweet jam allows you to indulge without excess.

Natural preservation. Sugar remains necessary for preservation. By dosing it precisely, we obtain a jam that keeps well, without added artificial preservatives. Slow cooking and organic whole cane sugar are enough.

Why Organic Whole Cane Sugar?

The sugar we use is not refined white sugar. It is organic whole cane sugar, produced through an artisanal process. It retains part of the cane's natural molasses, which gives it its characteristic brown colour and slightly caramelised flavour.

Nutritionally, organic whole cane sugar contains minerals (calcium, potassium, magnesium, iron) and vitamins (B1, B2, B3, B6) that are eliminated during white sugar refining. This is not an argument for consuming it without limit — sugar is still sugar — but it is one more reason to prefer organic whole cane sugar over refined white sugar.

How to Enjoy Our Jams

Jam is a simple pleasure, suited to many uses.

At breakfast, on a slice of our natural sourdough bread, with a little beldi butter or fresh goat's cheese.

As a dessert, on plain yoghurt, a pancake, or a slice of brioche.

With cheese, for a sweet-savoury pairing: bitter orange jam with fresh cheese, or fig jam with goat's cheese.

In cooking, to glaze meat, fill a tart, or enhance a sauce.
