It's the season. The apple trees have given their fruit, harvests are following one another, and at The Green Souk, every week brings its arrival of organic apples. This week, our stalls welcome varieties from two distinct terroirs in Morocco: the Siroua mountains, with traditional beldi apples, and the Ifrane region, with Fuji and Golden. All are organic, grown without synthetic chemical inputs, and picked at maturity.
One Season, Weekly Arrivals
The apple season spans several months, but not all varieties ripen at the same time. That is what makes this period so rich: every week, new varieties arrive, following the rhythm of harvests and terroirs.
Some weeks, early varieties open the dance. Other weeks, the late ones — sweeter, more fragrant — take over. This natural rhythm is an invitation to discovery: you don't eat the same apple in October and in December. To better understand why seasonality changes everything, you can read our article on the return of leafy greens in September.
At The Green Souk, we follow this calendar as closely as possible. Our arrivals are harvested at maturity and delivered quickly, without prolonged cold storage. Every week, a new variety — and with it, a new flavour, a new texture, a new story.
Siroua: A Preserved Mountain Terroir
The Siroua massif, in the Taznakht region, is a mountain territory where family farming has endured for generations. It is in this context that our beldi apples are grown.
The term "beldi" deserves attention. In Moroccan culture, it literally means "what comes from the country", from the local terroir, as opposed to "roumi", what comes from the West. Beldi products are grown in family gardens, using traditional methods, often without chemical inputs.
Beldi apples from Siroua are produced in small family orchards, by farmers who perpetuate ancestral know-how. Their flesh is crunchy, their flavour naturally sweet and fragrant. These are apples that were not selected for their size or their resistance to transport, but for their taste.
Ifrane: Fuji and Golden, Two Quality Classics
The Ifrane region, with its mountain climate and temperature swings between day and night, offers ideal conditions for growing apple trees. This is where our Fuji and Golden apples come from.
Fuji is recognisable by its red, sometimes striped skin, and its cream-coloured flesh, very sweet, crunchy, and juicy. It is an apple that keeps well and appeals to lovers of sweet fruit.
Golden has a bright yellow skin, slightly greenish depending on ripeness. Its white-yellowish flesh is juicy, crunchy, and sweet. It is a versatile apple, as good for eating fresh as for cooking.
Both varieties are grown according to organic farming principles, without pesticides or synthetic chemical fertilisers. They are harvested at full maturity and delivered quickly, without prolonged cold storage.
Why Choose Organic Apples?
Choosing organic is not trivial. A 2024 study by ITAB showed that organic fruit and vegetables have average pesticide residue concentrations 100 times lower than their conventional equivalents. This significantly reduces dietary exposure to chemical contaminants.
Organic farming also presents documented environmental benefits: improved soil biodiversity in 70% of cases, 50% reduction in greenhouse gas emissions for plant production, and an 11 to 35% increase in soil organic carbon. To go further on the issues of residues and treatments, read our article on Gala Devil apples from Ifrane.
For apples specifically, a study published in 2026 analysed 31 samples taken in the Fès-Meknès region. The results are concerning: 22 pesticide residues detected in 83% of samples, including seven banned compounds. Choosing apples grown without chemical inputs therefore becomes a matter of common sense. A scientific study on pesticide residues in Moroccan apples documents this situation precisely.
The Health Benefits of Apples
The apple is one of the most recommended fruits in a balanced diet. Its nutritional richness and low calorie density make it a valuable ally.
Rich in fibre. The apple is an excellent source of pectin, a soluble fibre that regulates intestinal transit, reduces cholesterol by capturing fats in the digestive tract, and promotes satiety.
A source of antioxidants. Apples contain polyphenols and flavonoids, antioxidant compounds that protect cells against oxidative stress. The skin, in particular, is rich in quercetin, a flavonoid with anti-inflammatory properties.
Vitamins and minerals. Apples provide vitamin C, as well as B vitamins and vitamin E. They also contain potassium, which helps regulate blood pressure.
An important clarification. To fully benefit from the apple's advantages, it is recommended to eat it with the skin. That is where half the fibre and most of the polyphenols are concentrated.
How to Enjoy These Apples?
