The Green Souk: My Peasant Market, a Story of Conviction
My name is Cristina. I am Italian, a biologist by training, and I have lived in Morocco for over thirty years. The Green Souk is my project, my daily life, and something that deeply reflects who I am. I would like to tell you how it came to be, what it stands for, and why it exists.
The Desire to Do Something Useful
A few years ago, I felt the urge to return to the land. At first, I thought about buying a plot and farming it myself. Then I gave up on that idea. By spending time with Moroccan farmers, I understood something simple: they have knowledge and expertise I could never match. What they lack is not know-how — it is a market.
That is where the idea of The Green Souk was born: a small peasant market in Casablanca, giving an opportunity to producers who refuse to use phytosanitary products and who, too often isolated from distribution networks, struggle to sell their produce and their traditional know-how.
Short Supply Chains: A Matter of Common Sense
My job is to be in the field. I visit the producers, I know their plots, their practices, their stories. I personally know those who grow the vegetables, press the olive oil, make the cheeses, or harvest the honey.
What I sell in my shop, I have seen grow, be harvested, be transformed. I can tell you where each product comes from, who made it, and how.
Terroir is my compass. Olive oil from Ouazzane, almonds from the Souss, honey from the Middle Atlas, dates from Alnif, capers from Safi — every product has an origin, and that origin gives it its character.
Organic, Without Dogma
I offer a wide range of healthy products: fresh fruit and vegetables, olive oil, honey, pantry staples, farm eggs, natural cosmetics.
Some are certified organic. Others come from small producers for whom organic is a matter of common sense, long before it becomes an administrative process. Some live in preserved areas — mountains, oases, isolated regions — where pesticides and chemical fertilisers have never been used.
What matters to me is traceability and trust. I personally know every producer. I follow them regularly, I visit their farms. Their passion and their natural methods are my best guarantee.
Freshness: A Matter of Hours
When you buy from me, you taste preserved freshness. The ultra-short supply chain allows me to control the entire process: harvesting at maturity, optimised logistics, rapid delivery.
Fruit and vegetables are picked at full maturity, when their flavours and nutrients are at their peak. They never go into cold storage: they keep all the freshness and taste of fruit just picked from the tree.
My offer follows the seasons. No tomatoes in winter, no squash in the middle of summer. I like this constraint, because it brings me back to what is true: every product has its moment.
What You Will Find in My Shop
Amlou, first of all. This almond and argan oil paste, available in sweetened or unsweetened versions, is one of my flagship products. A customer once told me: "Excellent unsweetened amlou, I am diabetic and I was very happy to know that you can find unsweetened amlou in Casablanca." That kind of feedback is what gives meaning to my work.
Msemen, next. Homemade with traditional Moroccan flours, authentic beldi butter, and organic olive oil. Crispy on the outside, soft and flaky on the inside.
Flours and couscous, made from ancient peasant seeds grown without pesticides or chemical fertilisers, rich but low in gluten.
Honey: thyme, euphorbia (Daghmouss), or multifloral, from regions such as the Middle Atlas or Taznakht.
And lacto-fermented vegetables, a range I am developing with care.
More Than a Business
Buying from me is not just grocery shopping. It is supporting agriculture with a human face, by buying directly from producers at a fair price. It is participating in the vitality of Moroccan rural areas and the sustainability of precious know-how.
It is also reducing your ecological footprint: less transport, less superfluous packaging, no waste linked to overproduction.
It is, finally, rediscovering the taste of what is real. By letting time and nature do their work, food regains an intensity and complexity of flavour that industrial agriculture has made disappear.
Delivery and Access
The Green Souk is both a physical shop in Casablanca and an online platform. Deliveries are made from Monday to Saturday.
In Casablanca, Bouskoura, and Dar Bouazza, delivery can be made the same day if the order arrives a few hours before the shop closes, or within the hours following receipt. From 11:00 am, after the fresh vegetables arrive.
In other major Moroccan cities, delivery takes 1 day + 1, within a maximum of 48 hours.
Goods are packed in recycled cardboard boxes and accompanied by a summary receipt.
A Community
I love to share. On social media, I show what goes on behind the scenes, the producers, the seasonal products, the recipes. It is a way of creating a community around a healthier and more conscious lifestyle.

A Commitment That Goes Beyond My Shop
My commitment does not stop at my shop. I support a pilot project in the village of Ighrem, near Tiznit, in collaboration with a local cooperative, "Al Amal". Together, we helped reintroduce vegetable growing, which had been abandoned for years due to a lack of commercial outlets. The operation was based on the use of organic and local seeds, and training farmers in agroecological techniques.
That, for me, is what The Green Souk is: a project that connects the city to the countryside, and does good for both.
Conclusion
The Green Souk is more than a grocery store. It is a warm space where ecological awareness and a spirit of sharing meet. A place where people take the time to talk, to value those who produce locally, and to make shopping simpler and more enjoyable.
Whether you come to see me at the peasant market in central Casablanca or order online for delivery anywhere in Morocco, you are choosing conscious and committed food.
Eat local, eat seasonal, eat with awareness.
