Organic cardoon is a traditional vegetable, especially enjoyed during the colder season for its mild flavor and tender texture. Its taste is close to artichoke, and it is always eaten cooked, making it ideal for comforting winter dishes.
Grown at the Dar Bouazza farm, managed through agroecological practices for over 20 years, this cardoon is locally produced with care for the environment and soil health. The farm is run by Abdellah, a committed farmer trained by Terre et Humanisme, who grows a wide range of organic vegetables throughout the year.
Cardoon stalks are usually cooked in gratins or served with a light sauce, often prepared with olive oil. It pairs naturally with other organic vegetables, especially Spinach, Salads, and Broccoli, for seasonal and wholesome meals.
