The Green Souk's organic cucumbers are grown using agroecological farming methods by small local producers, mainly in the Casablanca and Rabat regions. Depending on the season, they may also come from Skoura, Larache, or other Moroccan terroirs, as well as from a Demeter-certified biodynamic farm in Taroudant. Each growing region brings its own character and reflects the expertise of farmers committed to sustainable agriculture. Valued for their crisp texture, refreshing taste, and high water content, cucumbers are naturally rich in fiber, vitamin K, and antioxidants. They help support hydration and fit perfectly into a healthy, balanced diet. They can be enjoyed sliced on their own; in the traditional Moroccan salad, combined with other seasonal vegetables; or prepared as gazpacho, hot or chilled soups, or lightly sautéed for a different culinary experience.
